First and foremost we learn that God prohibits consuming blood to remind people that all life ultimately belongs to God. Also a covenant is an external mechanism used to bind together a relationship that has been broken and prevents people from hurting each other while they wait for the arrival of the promised seed of the woman to put things right. A covenant is like a repair mechanism which is good but not best.
